Easy Banana Pancakes

Bored of cereal and toast? Here’s a quick, healthy and tasty way to spruce up your breakfast…

What you need:
• 2 free range eggs
• 1 banana
• One calorie spray oil
• Handful of cranberries (or dried fruit of choice)
• Golden syrup (or sugar or honey, if desired)

Prep time (5 mins):
• Crack and whisk eggs
• Peel and mash banana
• Mix eggs and banana together

Cooking time (5 mins):
• Spritz oil into pan and allow to heat
• Pour in pancake mix and cook on both sides until brown
• Sprinkle with cranberries
• Drizzle with golden syrup

And….enjoy!

  1. This looks really good! The last time I tried to make this it was like an omelette with banana chunks in… not good, maybe I’ll give it a second attempt 🙂
